Soak moong dal 4+ hrs. Blend with ginger-chili paste and bit of water til thick smooth batter

For filling - sauté paneer and carrot with turmeric, salt, cumin. Cook til dry

Hot nonstick tawa, pour batter, spread thin quick. Cook til edges lift

Spoonful of filling, fold, cook 1 more min. Mint chutney on the side
