Perfect for rainy days. The key is to slice the onions thin and not add too much water to the batter. They should be scraggly, not round.

Instructions
Mix sliced onions with salt, let sit 10 mins. They'll weep and soften - that moisture is your batter liquid.
Add chillies, ginger, and spices.
Add besan and rice flour gradually. Mix with hand.
The mixture should be stiff, coating the onions - not a runny batter.
Heat oil. Drop irregular clumps into hot oil.
Fry on medium heat until crispy and deep amber colored.
Sprinkle chaat masala and serve.
