My mom's recipe. The trick is to cool the potato mixture completely before stuffing, otherwise the dough tears and it's a mess.

Instructions
Make a soft dough with flour and water. Rest it.
Mash potatoes well (no lumps allowed!). Mix with spices, chillies, and herbs.
Take a lemon-sized ball of dough, flatten it, and put a generous amount of filling.
Seal the edges like a dumpling and flatten again.
Dust with flour and roll out gently.
Cook on a hot tawa with generous ghee or butter until crispy and brown.
