Amritsari Kulcha (My Tawa Hack Version)
You don't need a tandoor for this! Crispy on the outside, soft on the inside, stuffed with spicy potatoes. The inverted tawa trick works wonders.

Knead flour, yogurt, baking powder, soda into soft dough. Should feel like your earlobe. Rest 2 hours.
Mash potatoes with onions, green chillies, anardana, and spices.
Roll out a ball of dough, place filling in center, and seal.
Gently roll out again without breaking the seal.
Wet one side of the kulcha with water.
Slap the wet side onto a hot tawa so it sticks.
Invert the tawa over the direct flame to roast the top surface.
Scrape off, crush with hands, and top with a big knob of butter.
