Prep the Chicken Clean and pat dry the boneless chicken. Cut into 2-inch tikka pieces.

Marinate Coat the chicken with all marinade ingredients and rest at room temperature for 1 hour.

Prep Aromatics Finely chop the onions. Lightly roast the Kasuri Methi and crush it.

Fry Tikkas – Batch 1 Heat oil in a pan. Add tikkas in a single layer. Fry 2 mins per side on medium heat.

Finish Frying Lower heat and fry 3 mins per side. Remove and repeat for remaining batches.

Start the Gravy Heat 2 tbsp oil. Add chopped onions and sauté on medium heat for 5 mins until light brown.

Add Ginger-Garlic Stir in ginger–garlic paste and cook on low heat for 2 mins.

Add Tomato & Spices Mix in tomato purée, then turmeric, red chilli, coriander, cumin, and a pinch of salt. Cook 2 mins on low.

Simmer with Tikkas Add fried tikkas and 300 ml water. Stir in garam masala. Cover and cook on low heat for 10 mins.

Finish the Dish Uncover, add cream, and cook 2 mins. Add crushed Kasuri Methi and cook 2 mins more. Serve with naan or rice.
