My Ammi's 'Guest Special' Butter Chicken

Forget the sweet orange stuff you get in jars. This is the real deal with a smoky flavor. Kasuri methi at the end and lots of butter - don't be stingy.

Marinate the chicken with yogurt, half the chilli powder, ginger-garlic paste, and salt for at least 4 hours (overnight is best).

Grill the chicken in a pan or oven until charred spots appear - don't cook it all the way through, just get that char.

In a heavy pot, melt butter and sauté whole spices until you smell cardamom first, then bay leaf. That's when it's ready.

Add tomato puree and cook on medium heat until the oil separates from the sides (the 'bhunno' process).

Add the grilled chicken and the juices into the gravy.

Simmer for 15 minutes, then stir in the cream and crushed kasuri methi.

Serve hot with naan.
