Hyderabadi Biryani (Kacchi Style - No Shortcuts)
This is Kacchi Akhni style - raw meat marinated and cooked together with the rice. It requires patience and a heavy hand with the saffron. Not a weeknight dinner!

Marinate chicken with yogurt, spices, ginger garlic paste, papaya paste (tenderizer), and fried onions for 4 hours.
Soak rice for 1 hour. Boil water with whole spices and lots of salt.
Cook rice until exactly 70% done (grain should still have a bite).
Layer the raw marinated chicken at the bottom of a heavy pot.
Layer the par-boiled rice over the chicken.
Top with ghee, saffron milk, and more fried onions.
Seal the pot with dough (Dum) and cook on high for 10 mins, then lowest flame for 40 mins.
Let it rest for 20 mins before opening. Serve carefully.
