Vada Pav - Mumbai's Best Street Snack
The heart of Mumbai street food. Spicy potato ball in gram flour batter, fried, stuffed in soft pav with two chutneys. The dry garlic-peanut one makes or breaks it.

Temper mustard seeds and curry leaves, add mashed potatoes, turmeric, ginger-chili paste. Fry briefly
Form small balls. Dip in besan batter (water, salt, pinch baking soda), deep fry til golden
Slice pav. Slather both chutneys inside - dry garlic AND mint. Be generous
Place the hot vada inside the pav, press gently, and serve immediately with a fried green chili on the side.
