Undhiyu (Winter Vegetable Medley)
The crown jewel of Gujarati cuisine. It takes hours to clean the veggies, but the result is a flavor explosion. Best eaten on Makar Sankranti.

Make the green masala with coconut, coriander, green garlic, and chillies.
Stuff this masala into slits made in potatoes, bananas, and brinjals.
Fry the methi muthias beforehand.
In a heavy pot, layer the vegetables (hard ones at bottom, soft at top).
Pour oil and a little water. Cover tightly.
Cook on low heat for 40 mins, shaking the pot occasionally (don't stir!).
Add muthias in the last 10 minutes.
