Khaman Dhokla - The 'No-Choke' Fluffy Version

Sift the besan. Seriously, do it. Lumps = dense dhokla.

Mix besan, rava, sugar, turmeric, and water to make a smooth batter.

Add lemon juice and let it rest for 10 minutes.

Get your steamer ready and greased. Just before steaming, add Eno and mix gently in one direction.

Pour immediately into the tray and steam for 15-20 minutes on high.

For tempering: Heat oil, pop mustard seeds, add chillies and water with sugar.

Pour the cool tempering water over hot dhokla. You'll hear a sizzle and watch it absorb everything. So satisfying.
