Pressure cook dal with turmeric, 2 cups water. 3-4 whistles til mushy. Mash it up
Boil drumstick, carrots, shallots in 1 cup water til just tender. Add tomato, 2 more min
Dump in mashed dal, tamarind, sambar powder, jaggery, salt. Keep it thin, add water if needed. Simmer 10-12 min
Tadka time: oil, mustard seeds til they pop, then red chillies, curry leaves, hing. Pour over sambar immediately
Let it sit 5 min before serving. Better with dosa but honestly rice works too
