Instructions

Grate carrots (don't use a food processor, hand grated is better texture).

In a heavy bottom kadhai, combine carrots and milk.

Cook on medium heat, stirring often. Takes about 45 mins. You'll know it's ready when the spoon drags and leaves a trail.

Once dry, add the sugar. The mixture will liquefy again.

Cook until thickened again.

Add ghee and roast (bhunno) for 10 minutes until it looks glossy.

Garnish with nuts and serve warm.
