Farah Khan's Bread Chicken Cutlets (with Farrhana Bhatt)

Heat oil for deep frying. Fry bread slices until golden and crispy, about 2-3 minutes. Remove and set aside.

In the same oil, fry chicken pieces until cooked through, about 5-7 minutes. Remove. Flash-fry spinach for 30 seconds. Remove and let everything cool.
Add fried bread, chicken, spinach, raw onion, green chilies, coriander, salt, and black pepper to a mixer. Crack in the egg.

Blend into a thick paste. If blender gets stuck, scrape sides and pulse. Add a splash of water if needed.

Shape mixture into round patties about 2 inches in diameter.

Roll in breadcrumbs for extra crunch (optional).
Shallow fry cutlets on medium heat until golden brown, about 3-4 minutes per side.

Drain on paper towels and serve hot with green chutney or ketchup.
