
Avial (Kerala Veggie Stew)
A mix of native vegetables in a coconut-yogurt gravy. No turmeric allowed! It should be pale green-white and smell of coconut oil.

Instructions
Cut all veggies into long baton shapes.
Cook veggies with very little water and salt. Don't overcook them.
Grind coconut, cumin, and green chillies into a coarse paste.
Add paste to veggies and cook for 2 mins.
Remove from heat and stir in whisked yogurt.
Drizzle raw coconut oil and curry leaves on top. Cover and let rest.
