My Weekend Mutton Curry (Pressure Cooker)

Simple, no fuss mutton curry that falls off the bone. I learned this from my hostel warden. It's spicy and oily in the best way.

Instructions

Heat mustard oil until smoking, then cool slightly.

Fry whole spices and sliced onions until dark brown.

Add mutton pieces and sear on high heat for 10 minutes.

Add ginger-garlic and powdered spices. Cook for 5 mins.

Add warm water, seal pressure cooker.

Cook for 5-6 whistles on low heat.

Open and garnish with coriander. Gravy should be thin but flavorful.
